The Old Cuban is a refined sparkling cocktail that bridges classic rum drinks and Champagne-style serves. White rum provides a clean, dry backbone, while fresh lime juice and sugar syrup create balance, lifted by mint aromatics and sparkling wine. Elegant and refreshing, it combines structure with effervescence for a polished finish.
Preparation Method
Lightly slap the mint leaves between your hands to release their essential oils. Add the mint and sugar syrup to a shaker and apply a very gentle press, avoiding bruising the leaves. Add the white rum, fresh lime juice, and Angostura bitters. Fill the shaker with ice and shake briefly to chill and create a fine, silky texture. Double strain into a chilled coupe glass. Top with very cold sparkling wine and serve immediately.
