
Overview
Port Wine Flip is a classic after-dinner flip: port, whole egg, sugar, and cream shaken into a rich, foamy drink. The whole egg is structural, giving body and custard-like texture.
Preparation Method
Dry shake port, light cream, powdered sugar, and a whole egg without ice to emulsify. Add ice and shake hard until cold and foamy. Fine strain into a chilled coupe glass and finish with one pinch of grated nutmeg.
