Rabo de Galo is a Brazilian spirit-forward cocktail built with cachaca, sweet vermouth, and Cynar. It is earthy, bittersweet, herbal, and cane-spirit driven, with a structure that feels close to the Negroni and Manhattan families.
Preparation Method
Stir cachaca, sweet vermouth, and Cynar with ice until chilled. Strain into an old fashioned glass over fresh ice.
