Empellón Cocina’s Fat-Washed Mezcal is a bold, spirit-forward after-dinner cocktail that combines smoky mezcal with the richness of chocolate and coffee liqueurs. Velvety and aromatic, it delivers deep cocoa bitterness, roasted coffee notes, and a lingering mezcal smokiness softened by the fat-washing process.
Preparation Method
Prepare the fat-washed mezcal in advance by combining melted pork fat and mezcal, sealing, freezing, and straining until fully clarified. Add the fat-washed mezcal and chocolate liqueur to a mixing glass filled with ice. Stir until well chilled, then strain into a chilled coupe glass. Carefully layer the coffee liqueur by pouring it slowly over the back of a spoon.
